The Blade Is Beveled On One Side, Creating A Thinner Edge Than A Knife Beveled On Both Sides, Which Allows Extremely Fine Cuts. Also, Only The Beveled Side Requires The Main Sharpening, So Less Time Is Required For Maintenance.

Variation:
